Chia Pudding

6 Servings

  • 2/3 cup chia seeds
  • 2 cups unsweetened almond milk or coconut milk
  • 1/2 t pure vanilla extract
  • 2 T berries, chopped dried figs or dates (optional)
  • 2 T shredded coconut flakes (optional)

Place chia seeds, milk and vanilla extract in a glass quart jar with lid. Cover and shake or mix all the ingredients together and place in refirdgerator over night. Scoop out a cup of pudding top with coconut and fruit of your choice and enjoy!
